Wonderfully Delicious Baked/Grilled Fish

I am always looking for ways to get more fish into my family’s diet.  I’m trying to reduce the amount of red meat we consume and looking for ways to replace red meat with healthier choices for protein.  So I experiment a LOT with seasonings for chicken, fish, and seafood.  I tripped over this one last night and I think it is definitely going to be used frequently.

Fish with Spice Rub

Baked or Grilled Fish

1/2 t fresh cracked black pepper

1/2 t cumin

1/2 t paprika

1/2 t smoked paprika

1 t minced onions (fresh – use 2 t, or dry)

1 t garlic powder

1 t onion powder

1 t chili powder, I like Ancho, or Aleppo because of the smoky flavor

dash of cayenne pepper

Mix all the seasonings together in a bowl and set aside.  Blot the fish dry on paper towels.  Drizzle a very light coat of olive oil on both sides of the fish and coat with the seasoning mix.  Bake at 425 degrees for 12 – 15 minutes or until the fish flakes easily and is white all the way through, or grill on a medium hot grill until the fish flakes easily.  Serve with fresh cilantro, lime wedges, and avocado slices.  This recipe can easily be made in bulk so it is ready to use at any time.  If you are making the seasoning mix in bulk, be sure to use dry minced onion.
